Mutton is the meat from sheep of approximately 6 years of age. There is quite a variety of fat content from summer to winter growing seasons. Mutton carcass can be ordered in a weight range under 35 lbs when seasons are dry and typically 35-45 lb is the weight range consumed in the US market. New Zealand sheep variety are typically leaner than Australian sheep and we see quality meat up to 55 lb weight range. Fat thickness is specified in 0-5mm, 5-10mm, 10-15mm ranges.

Due to a price discount over goat it can make a great fill in. It is a favorite among Hispanic and African markets where a strong flavored firm meat is preferred. Cuts are kept simple, 6 way cut, bone in and boneless leg, shoulder and shank. Cooking methods are typically a slow moist style.
